We love making simple dishes at home, during the week, when life gets busy. One of our favorite breakfast recipes on the blog tonight, simple and delicious!Breakfast "Slop" 4 servingsIngredients:3 Potatoes shredded into hash browns3 tablespoon Olive Oil1 Medium Onion diced1 lb Sausage (or bacon chopped up)1 cup shredded cheese (we like any mexican cheese blend)6 eggs1/2 Cup MilkDirections:Wash and grate potatoes into shredded hash browns. Place oil in fry pan and fry potatoes at medium heat until crispy.In a separate fry pan, cook sausage. Add onion when sausage is fully cooked. Drain grease.Mix both pans together, potatoes and sausage/onion mixture.Mix eggs and milk in a bowl. Add eggs/milk blend to the pan. Tonight my husband, Tom, made a delicious dinner I wanted to share with everyone! We talked and made our meal plan for the week as he made tonight's meal so I've added that as well! Chicken and Spanish RiceIngredients:2 Chicken breasts2 Cups of rice (white or brown)2 Small onions (finely chopped)1 Tablespoon salted butter2 Cans of whole peeled tomatoes2 Jalapenos (stems cut off)4 Cloves of garlic2 Tablespoons Taco Seasoning (We make ours in bulk from a recipe HERE)1/2 Cup shredded Mexican cheeseDirections:Dice chicken and cook in a skillet. (While cooking chicken add jalapenos, tomatoes and garlic in a blender. Liquify the mixture.)Add taco seasoning and 1/4 cup of water to chicken. We had a relaxing day yesterday so I decided to bake one of our favorite grab & go breakfast snacks! I hope you give them a try as well! Pumpkin Oat MuffinsIngredients:1 egg1 teaspoon vanilla 2 bananas, mashed 1/4 cup honey 3 cups of oats2 tablespoons chia and/or flax seeds1 can pumpkin purée2 teaspoons baking powder1/2 teaspoon salt1 1/2 cups of milk 1/4 cup dark chocolate chips Directions:Mix egg, vanilla, banana and honey.
