Tonight my husband, Tom, made a delicious dinner I wanted to share with everyone! We talked and made our meal plan for the week as he made tonight’s meal so I’ve added that as well!
Chicken and Spanish Rice
2 Chicken breasts
2 Cups of rice (white or brown)
2 Small onions (finely chopped)
1 Tablespoon salted butter
2 Cans of whole peeled tomatoes
2 Jalapenos (stems cut off)
4 Cloves of garlic
2 Tablespoons Taco Seasoning (We make ours in bulk from a recipe HERE)
1/2 Cup shredded Mexican cheese
Dice chicken and cook in a skillet. (While cooking chicken add jalapenos, tomatoes and garlic in a blender. Liquify the mixture.)
Add taco seasoning and 1/4 cup of water to chicken. Cook until blended.
In a separate pan, add butter, rice and onions.
Once rice is golden brown add liquefied mixture.
Let simmer until rice is done, about 30 minutes.
Add chicken to rice mixture.
Place cheese on top, let melt.
